Looked pretty good to I. I spent enough time seated in doctors’ offices last year looking at pictures & models of busted knees in that I had busted my quad tendon. This sure reminded me of the models I had seen — though this was larger & more colorful.

Growing up in Ceylon, half a century ago, I was familiar with a cute saying: “those that know, know“!

It was used by meat sellers when they were selling PORK to Muslims. They would not advertise the pork as pork since that would make it difficult for the Muslims to buy it openly.

So, they left the pork unlabelled & told people who asked: “those that know, know“.

Muslims knew it was pork & they could buy it without the word pork ever coming up or getting mentioned.

So ….

Those that know, know“.

I have always told you that I have an irrelevant & irreverent (British) sense of humor. SMILE.

Low-Carb Diet Needed Modification After 3 Years.

Yes, I have been on my low-carb diet, without exception, for over 3 years — having started it on January 22, 2013 when I was ‘diagnosed’ with prediabetes. I lost (close to) 30 pounds very quickly and until the start of this year, i.e., 2016, had no trouble staying at a steady weight, viz. 163 lbs, which represented a 26 pound weight loss.

This was not the first time I had done low-carb/Atkin. I had done it twice before, both with great success, albeit just for about a year each time. So this is the longest I have been on this low-carb diet. I am used to being on a specific, unwavering diet or regime for long periods. I was on my FASTING for 3 DAYS/WEEK for 10 years or so! NO, it is not a matter of ‘willpower‘. I do not subscribe to willpower since it conotes a power struggle between you and your brain. That is not good. What you need instead is 100% cooperation and harmony between you and your brain. Then things like sticking to a diet becomes a piece of cake. I just finished writing a book about this. It is called “Brain Meditation” since that is how you achieve that harmony. More about that later when I get around to publishing the book.

Anywho … I have no problem, whatsoever, with dying. Have always been like that. What scares the life out of me is living through the complications of diabetes! I was 7 years old when my beloved uncle, a renowned doctor, told me that it would only be a matter of time BEFORE I got diabetes. So in 1960 he pulled out this brown bottle of Saccharin pills and said “no sugar for you”. Use this. Though I ate a LOT of sweets — cakes, desserts and puddings in particular — well into my 30s I never took sugar (other than on my egg-hoppers). [Yes, of course, I know I am strange.] So now facing diabetes it is a choice. Low-carb to delay it, or living with diabetes. More I that is a no-brainer.

Up until the start of this year I had found that I could eat as much meat and cheese as I wanted without adding to my weight (or losing weight during the early days). So I snacked on ham, chicken/turkey/pork ‘hot dogs’ and cheese. I LOVE CHEESE. I can live on cheese, if I had to. So for 3 years I put no limits on my cheese, ‘hot dog’, ham and meat consumption. I was doing good and my cholesterol levels were beyond enviable.

Then this January things started to change. My weight started to slowly creep up and I couldn’t shed it. That was strange. I was also having digestion issues — despite my daily Metamucil regime (of 25 years) and above-average consumption of vegetables, greens & fruits. I was not happy. My weight went up to 169. I could have, if I wanted, stayed at that. That would have been the 20 pounds I was told to lose. But I did not like being at 169. I was happier at 162 – 163. So, as ever, I gave it a lot of thought. Finally realized that it had to be the cheese, ham and processed ‘hot dogs’. Yes, the salt was making me retain water. So I basically eliminated, ‘cold turkey’, the cheese and hot dogs — which had been daily staples for 3 years. Yep, I can do that (and so could YOU if you practice ‘brain meditation’). So now I just eat a little bit of real (unprocessed meat) at snacks and maybe less than an ounce of cheese. Make up for that with fruit.

Today, after 3 weeks of that modified diet I was at 159. I like 159. I am going to stay on this. Let’s see if I lose more weight. As an adult I have been down to 142 lbs — when I started my FASTING for 3 DAYS/WEEK diet. Went from 204 to 142 in about 6 months. At 142 I was a skeleton. You could see every one of my ribs.

Anywho …

Just wanted to SHARE with you. IF you are on low-carb for an extended period of time (and I hope you are) — then think about cutting way back (way back) on cheese, ham and processed meat. [I was never a big bacon eater though I eat a lot of pork.]

Egg Hoppers — the only thing I ate with (raw) sugar since I was 7 years old. But I haven’t eaten one in 24 years! Sad isn’t it?

I have always liked Subway BUT since having an ‘Applewood Pulled Pork‘ chopped salad in mid-August I have been a great fan of their chopped salads.

I even started chopping my salads — and I eat a LOT of salads, near daily on my diet.

phillysubwayLast night on the way back from ‘Revels‘ (or what purported to be ‘Revels’) at Dartmouth we stopped at a Subway — for Devanee and I, before stopping at McDonalds for Teischan. (Deanna was full from our late lunch).

Devanee, at my urging, for a footlong BLT — so that she would have some leftover for today also.

I had the Big Philly Cheesesteak, with added Swiss, in a chopped salad with the Chipotle Dressing. It was divine. Wow.

I could go and eat another of those salads right now.

Their chopped salads are GOOD. If you haven’t tried one please do yourself a favor and think of all the carbs you are avoiding.

was not a very big pizza eater — but about the ONLY place where I would eat pizza would be at Giueseppe’s. So it would have been churlish if I did not vote.

I have gone back twice and had a look. Hhhmmmm.

Strange. Yes, I see some obvious places I recognize like the Pizza Barn in Ossipee, but a lot of places I have never heard of. Though I am not a huge pizza eater doesn’t mean I do not know ‘many’ of the popular local eateries. 

I am dying to see the final results.

I hope Giuseppe’s do reasonably well. Of course it is the family favorite. Devanee is already insisting that we go there for dinner for her birthday, as we did last year. And yes, I have e-mailed Julie to give her a heads up that we most likely will be there.

Intrigues me how the kids like the place. That is good.

So please don’t let me influence you, but at least do your civic duty and cast a vote.

I am now going to go an have a chopped salad, with hot, hot green peppers and two home-cooked, pork burgers.

subwaysaladOn my very low-carb diet, that I have been on since January 24, 2013, and have lost 22(+) pounds, I tend, by necessity, to eat a lot of salads, especially for dinner. It is not unusual for me to have salads (albeit always with a meat topping) five nights a week — if not more. The days I don’t have a salad I eat a spiced-to extreme [i.e., hot enough to make a Mexican blanche] curry, loaded with vegetables with a lot of turmeric, and cumin and caraway seeds (that according to the quack on CNN is supposed to be very good for you and there must be a grain of truth to it because Indians having been scoffing down these spices for millennia and are still around in large numbers).

I had never really given much thought to salad preparation. I am not really fussy about food. So the notion of finely chopped salads had never really crossed my mind.

Then I had that Applewood Pulled Pork chopped salad at Subway, in mid-August, on the way back from Storyland. It was a revelation. The chopping sure does spread the flavor around. I watched the young girl use a curved chopper in awe.

I wanted ONE. My birthday was coming up and Deanna always complains that she doesn’t know what to get me. So I checked Amazon.

Found this ‘Mezzaluna‘, when I typed in ‘salad chopper’. Put it, and the bowl, in my Wish List and send it to Deanna. Santa, Easter Bunny or the tooth fairy (and I am not really sure which one of these handles birthday presents) did the rest. I got the very ergonomic and pleasing on the hand Mezzaluna. I have used it about 4 times since — taking into account that we have been eating out quite a bit since my birthday. Love it. Really makes a difference.

I typically use sliced, very hot green pepper and one to two stems of scallions in my salads for ‘spice’. This Mezzaluna really grinds it all up. Then I add some salad dressing, mainly Ranch, and do a bit more rocking. That really does the trick.

Highly recommend it.

We Went To The Dover Greek Fest On Saturday, August 31. It was a BLAST. Great People. Lamb Was Divine!

I wasn’t going to miss this. I had been thinking about the lamb shank for a week. I earned that lamb shank! Working like a crazy person is more or less the norm for me. But this last month had been even crazier trying and succeeding in getting out 2 books in print, 230 tightly formatted pages, within the month — in addition to updating the eBook versions. So I was ready for that lamb shank. It was good. Exquisitely and delicately spiced. Very tender. Fell off the bone with the lightest touch of the plastic fork. These Hellenists know how to cook their lamb.

The kids discovered another treat. Baklava Sundaes. Decadance in a plastic bowl for $3. I refrained. I didn’t even have the rice that came with the shank. But the kids had a Baklava Sundae each. Genius.

The Fest was at the Dover Hellenic Center on Longhill Road. First time we had been there or even knew it existed, Large building on a HUGE tract of land. Kind of tucked away. We found Longhill Road by luck. That worked out. We had thought it was closer to town — but as we were driving into Dover, from Rochester, on the ‘back road’, Deanna happened to see the road sign that said ‘Longhill’. From that point on they had good signage for the Fest. Very well done.

Nice bunch of people. Teischan’s piano teacher, Siroun Braun, was there. She is the one, in the red top, in the gallery above — talking to Deanna and Devanee. She is the one who told us about it. The priest (Proistamenos) of the (beautiful) Dover ‘Annunciation Greek Orthodox Church‘, approached me and thanked me for my post on the Fest. Siroun had sent him the link. You can see him in the very first picture, in glasses, serving food.

Altogether we had a GREAT TIME. Missed the live band. But, we will be going next year.


At the fest I got to meet with iconographer D.C. Christopher Gosey, an ex-architect from Texas, who now lives in Manchester and has been painting mesmerizing icons for the last couple of decades. He is the one that painted most of the icons in the breathtaking Dover ‘Annunciation Greek Orthodox Church‘. It really was an honor and pleasure to meet him. He also does a lot of Ethiopian icons. I hope to bring you more of his work in the future. Mr. Gosey take a well deserved bow. Here are some examples of his work, though these pictures really don’t do him the justice he deserves.
